How to make…Scottish tablet

This simple candy recipe makes a great addition to holiday plates, or any time when you want a rich, melt-in-your-mouth treat. It’s crumbly texture and buttery, vanilla flavour is pure luxury.

We’d eaten store-bought Scottish tablet and were pleased to find the recipe on Pinterest a few years ago. Our thanks to The Naughty Cook who inspired our variation.

Ingredients

4CupsGranulated sugar
1CupMilkScant measure
1CanSweetened Condensed Milk(14 oz)
½CupButterPlus extra to grease the tray
DashSaltOptional
2TbspVanillaUse less for a lighter vanilla flavour
1CupNuts, raisins, or alternative add-insOptional

Preparation

  1. Prepare your cooling tray by greasing it with butter.  I use an 11 x 15 jelly roll pan, but you could use a 9 x 13 or 8 x 8; your pieces will simply be thicker if using a smaller pan.
  2. Into a large, stainless steel saucepan, add your sugar, milk, condensed milk, butter & salt, if using. 
  3. Turn on the heat and stir regularly until the butter is melted and the mixture begins to boil.
  4. Once it’s boiling, stir occasionally to keep the mixture from sticking and allow to boil gently for 15-30 minutes until the colour of the mixture turns from pale to golden brown.
  5. When it reaches the colour you wish, remove the pan from the heat and add the vanilla.#
  6. As soon as you add the vanilla, beat the mixture vigorously for 4-5 minutes until it starts to feel stiff and gritty.  I use a hand mixer for this step, but you could use a spoon.
  7. Working quickly, pour the mixture into the tray.  You can score the tablet into squares or bars with a sharp knife and then allow it to cool completely.
  8. When fully cooled, remove the tablet from the tray and cut it at the score marks.  The tablet is ready to eat immediately.

Note: We never add any additional nuts to our tablet, but a Scottish friend of ours remembers that his Mum made it with walnuts.  If you want a variation, you could try stirring these in right before pouring the mixture onto your greased tray.
