How to make…Oatmeal scotchies
This recipe comes from the back of the Nestle Toll House Butterscotch Morsel bag… the place from where so many good American cookie recipes originate. In the UK, butterscotch chips are hard to find at a reasonable price, but you can find them on Amazon (check our shop for an affiliate link) if you want to make these as a very special treat.
We were fortunate to be able to import butterscotch chips in our luggage when we made our regular trips back and forth visiting family in the States and Sandy’s work colleagues were always pleased when she brought these in for meetings.
Ingredients
1¼ | Cups | Flour | |
1 | Tsp | Baking soda | Bicarb of soda |
½ | Tsp | Ground cinnamon | |
½ | Tsp | Salt | |
1 | Cup | Butter | Softened. Or margarine. |
¾ | Cup | Granulated sugar | |
¾ | Cup | Packed brown sugar | Light or dark will equally work. |
2 | Eggs | Large | |
1 | Tsp | Vanilla extract | |
3 | Cups | Oats | Quick or “old-fashioned” |
1 | Pkg | Butterscotch morsels | Or use raisins or other add-ins. |
Preparation
- Combine the flour, baking soda, cinnamon and salt in a small bowl.
- Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in a large mixer bowl until light and fluffy.
- Gradually beat in the flour mixture, then stir in the oats and morsels.
- Refrigerate the mix for at least an hour.
- When ready to bake, preheat the oven to 375 F / 190 C.
- Drop by rounded teaspoonfuls onto ungreased, non-stick baking sheets. The cookies will rise so leave space for this.
- Bake for 7-10 minutes until cookies are light golden brown. The longer they bake, the crisper they will become.
- Cool on the baking tray for a few minutes then transfer to a wire rack or paper to cool completely.
- Once cool, store in an air tight container.
