How to make…Ginger cookies
We love ginger in our household and these ginger cookies are full of it! Stem ginger, crystallised ginger and ground ginger all feature in this warming cookie that goes extremely well with an afternoon tea or coffee. Sandy always reported rave reviews from her work colleagues when she shared them at her team meetings.
Ingredients
3 | cups | flour | plain or self-raising |
1 | tsp | baking soda | bicarb of soda |
¼ | tsp | salt | |
1 | tsp | ground ginger | |
1 | cup | sugar | Superfine, golden caster sugar, if available, but granulated works, too. |
½ | cup | butter | 1 stick or 125g, preferably unsalted. |
¼ | cup | golden syrup | Or light corn syrup, measure generously. |
1 | large | egg | |
½ | cup | stem ginger | Normally found preserved in syrup, drain and coarsely chop into bite-sized pieces. |
¼ | cup | crystallised ginger | Optional, torn into pieces and placed atop the cookies before baking. |
Preparation
- Preheat the oven to 160C/325F. Prep your cookie sheets and cooling station. (We use a brown paper bag cut to lay flat.)
- In a large mixing bowl, combine flour, baking soda, salt, sugar and ground ginger.
- Dice the butter and put it in a small, heavy pan with the syrup. Heat it gently, stirring until the butter has melted. Remove from the heat and set aside to cool until just warm.
- Pour the butter mixture over the dry ingredients, then add the egg and two-thirds of the stem ginger. Mix thoroughly, then use your hands to bring the dough together.
- Shape the dough into balls, large or small, depending on what you require.
- Place the balls well spaced onto the baking sheets and gently flatten them to shape the cookies.
- Press a few pieces of the remaining stem ginger into the top of each cookie.
- Bake for 10-12 minutes, depending on the size of your cookies until they are lightly golden.
- Remove from the oven and leave for 1 minute on the baking sheet to firm up. Then transfer to your cooling station to finish cooling.
